Love the choc covered coffee beans on top (was considering doing the same thing but later forgot) :o) I've used that brand of Dulce de Leche before for my Tres Leches Cake and I really liked it.<br />Btw, to stabilize whipped cream, you can always add a little gelatin to it (it's in the back of the book).
