It says that the dough starter (sponge) can rise for 1-24 hours but it does not say at what point in the recipe it can rest that long. Is it just the dough starter...or with the flour ingredient blanket? I'm doing a long ferment so I put the flour blanket ontop of the sponge then put it in the refrigerator over night only to find that it looked exactly the same as it did when I put it in the fridge last night. So before I left for work this morning I put it out on the counter. I think I must have hit the sweet spot in dough hydration, or was just lucky in how much I pressed down while shaping.
